“Restaurants are an incredibly viable vehicle for what I’ve been successful doing for 25 years. A lot of people have been inspired by White Dog and have told me as much. They might not do all that we do. They might do different pieces or parts of what we do. But they do borrow. So I want to continue to encourage young and idealistic people to use restaurants as a vehicle, a gathering place for lectures and community events, but also to share our food purchasing practices.”
